Instructions: For a successful meat fondue, cut meat into 1" cubes. Arrange meat, cut vegetables, and side dishes on the table. Preheat oil in the fondue pot to a maximum temperature of 375°F/190C. Do not overfill the fondue pot (1/3 full is the maximum), as the oil may bubble up when food is added. Each guest spears a piece of meat or vegetable and dips it into the oil to cook. Provide sauces for dipping. For extra flavour, add 2 Tbsp of olive oil and some fresh herbs, such as bay leaves or parsley, to the oil. For a healthier version of meat fondue, stock or broth can be used in place oil, and fish or chicken can be used in place of red meat.
