  • Notepad and pen

Second Class

  • Two 9" round cake layers [one cake mix or one "standard" recipe] or one double-layer 8" or 9" round cake
    - these can be baked in advance and frozen; remove from the freezer and allow to defrost overnight in the refrigerator or on the counter
    - an easy way to transport the cake layers is to wrap them individually in plastic wrap (when fully cooled) and stack both layers in a cake pan; wrap the whole package in plastic wrap (if freezing, wrap in aluminum foil)
  • Cake slicer or long bread/confectioner's knife to torte the cake layers
  • 10" cake circle on which to assemble the cake
    - the base of a cake caddy can also be used as the base on which to assemble the cake
  • Cake lifter or a second 10" cake circle (or similar item) with which to lift and move torted cake layers
  • Two additional 10" cake circles (or similar item) to hold the torted cake layers
  • Sufficient icing (thin consistency) to fill and frost the cake
    - be generous; it is better to have leftover icing for use the following week than to run out
  • Optional: Sufficient filling (e.g., lemon curd, jam, pudding) for 3 layers
  • Palette knife with which to spread the icing
  • Optional: Piping bag, coupler, and tip 12 to pipe a dam for holding in the filling
  • Optional: Cake icer tip 789 and a large (14", 16", or 18") piping bag
  • Recommended: Revolving cake stand
  • Covered cake caddy or a cake box for transporting the completed cake home
  • Rubber or silicone spatula (for mixing icing)
  • Small plastic container
  • Kitchen towel

Course registrations are offered on a first-come/first-served basis. Payment in full for the course is due at the time of registration. To register for a course, visit our retail store or call us at 905-816-9995 (option 3). Space in each course is limited. You may request to be placed on the waiting list for a course, and you will be notified if space becomes available or if additional courses are scheduled.

Course registration fees are non-refundable and non-exchangeable. You may, however, send someone else in your place should you be unable to attend a scheduled class. We reserve the right to substitute instructors for any class. Courses are subject to cancellation, postponement, or rescheduling due to insufficient enrollment or inclement weather, at our discretion. Refunds will only be issued if you are unable to attend a postponed or rescheduled class, and for cancelled classes.
