in the spotlight… baking pan liners

no butter? no oil? no spray? no way!

Tired of having your cookies and other delicate pastries stick to the baking pan? Golda's Kitchen has four slippery-smooth solutions guaranteed to get you out of the stickiest situations (in the kitchen, that is) without the use of grease or oil! Here’s the low-down on the full range of pan liner options…

parchment paper -- versatile & affordable

For die-hard traditionalists, there’s the time-tested standard, parchment paper. Specially treated with sulfuric acid, this super-strong, super-smooth paper can take the heat even when wet, and can be tailor-trimmed to fit any size pan. Versatile and cost-efficient, parchment paper works equally well for baking and candy-making, and is microwave safe. It is, nonetheless, fragile and short-lived; though some people manage to re-use their sheets a few times, it is more common to see parchment discarded after just one use. Parchment paper is available from Golda's Kitchen in rolls of 20 square feet, 35 square feet, and 205 square feet. It is also available unbleached in a 71-square-foot roll.

SuperParchment -- improving on a good thing

SuperParchment boasts all the benefits of parchment paper with an important enhancement — reusability. SuperParchment’s distinctive light-brown Teflon coating combines superior stick-resistance with long-lasting durability, resulting in a flexible liner which can be washed, dried and re-used hundreds of times. Like standard parchment paper, SuperParchment can be cut to fit the pan of your choice including cookie sheets, cake and loaf pans, and springform pans. SuperParchment is available from Golda's Kitchen in 13” x 18” sheets (a half-size baker’s sheet).

Silpat -- Martha’s choice

Manufactured in France and widely-used throughout Europe, non-adhesive Silpat surfaces achieved celebrity status almost overnight when they were endorsed by Martha Stewart on North American TV. Rated to stand up to over 3,000 uses at up to 500°F, Silpat products use a food-grade fibreglass and silicon construction to provide an amazing non-stick surface which imparts no flavour to the goods being baked. Cookies slide from the tray while muffins pop out with ease, and cleanup is a cinch, with most pans requiring no more than a simple wipe with a damp, soapy cloth. Silpat is also Kosher-endorsed, with a certification copy available. Note that the manufacturer recommends Silpat mats not be cut. Available from Golda's Kitchen in full- (16.5" x 24.5") and half- (11.6" x 16.5") size baking mats, jelly roll pan (11" x 17"), and a range of specialty pans.

Pantec -- the Canadian alternative

Almost indistinguishable from Silpat, Canadian-made Pantec liners offer a comparably-rated, high-end product at a friendlier, more domestic price. Like Silpat, Pantec liners are a good choice to use when working with notoriously sticky lace cookies, sugarwork, caramel and chocolate, and receive hearty praise for their ability to produce super-high-rising muffins and cookies which are consistently uniform in colour throughout. Unlike Silpat, however, Pantec liners can be cut to size, making them more versatile for round- and odd-sized pans. Note that the manufacturer recommends turning your oven down 25°F from normal to achieve the best results. Microplane graters and zesters: simply the gratest!

It's not just an urban myth; the tale of the Canadian homemaker who "borrowed" her husband's new woodworking tool and accidentally stumbled on the world's greatest grater is absolutely true! Originally designed to rasp wood, the Microplane grater has indeed moved from the toolbench to the kitchen, earning both space and respect in kitchens around the world. According to its manufacturers, what makes the Microplane special is its unique cutting edge. Unlike traditional graters whose multi-edges are formed by punching holes through steel, the Microplane's holes are "photo-etched" - a high-tech chemical process which "dissolves" holes in stainless steel, creating razor-sharp edges which slice, rather than shred. The process produces a finely shaved and super-flavourful ingredient, grating ingredients from chocolate to spices to parmesan cheese with amazing ease. The makers of Microplane have a motto: "If it works, it must be a Microplane!" But the grater is so efficient and so effortless to use, that they might have been better off saying "If it doesn't feel like work, it must be a Microplane!" Either way, Golda agrees with the Washington Post, who call the Microplane "the greatest grater we've ever tried." Stainless steel and dishwasher safe. in this corner… squeeze bottles

useful items which are often difficult to obtain

You see them being used on the TV cooking shows all the time, but could never find them…until now! Plastic squeeze bottles are excellent for decorating soups or dinner plates with sauces or purees. Simply fill the bottle with the desired sauce and you can decorate with dots and lines or draw pictures of flowers or hearts. Or use them for serving flavoured oils and vinegars for salads. Microwave-safe bottles are also available, so you can melt chocolate directly in the bottle and then use it to decorate your desserts or provide the finishing flourishes to homemade truffles and chocolates. And for the retro look, plastic ketchup and mustard bottles (in red and yellow, respectively) provide a fun - and functional - element for your summer barbecues.
