Cookware is Now Available Online in Canada

All-Clad cookware consists of five product collections, all of which share common characteristics: a unique multi-ply construction, bonded to distribute heat evenly; long, stay-cool handles, attached with sturdy, non-corrosive stainless steel rivets; lids that fit even with the pan's edges to seal in the flavour of your foods; and, a hand-polished stainless interior that won't react with food. Each collection is distinguished by its exterior surface -- stainless steel, brushed aluminum, hard-anodized aluminum, or copper -- or by its conductive metal core -- aluminum or copper.

All-Clad's interior cooking surface is 18/10 stainless steel, which does not react with food, keeps the food away from the aluminum or copper core, and allows for quick, easy clean-up. With proper care, the interior will look great for a lifetime. The stainless steel cooking surface is the approximate thickness of 3 sheets of paper. It is, therefore, thin enough to allow the proper transfer of heat from the conductive core, but thick enough to withstand a lifetime of cooking. All-Clad cookware with a stainless interior cooking surface is oven safe to 500°F. Non-stick skillets and sauté pans feature a revolutionary, reinforced system for professional grade non-stick cooking which, like all All-Clad cookware, is covered by a lifetime warranty. All-Clad cookware with a non-stick cooking surface is oven safe to 400°F, but should not be used under the broiler.

All-Clad's conductive core is pure aluminum (or copper bonded with aluminum) that not only covers the bottom of the pan but also extends up the side walls. This allows for great heat conductivity as well as even heat distribution so you won't have "hot spots" when cooking. The superior heat conductivity means that the cookware is energy efficient, and can be used on a lower heat setting.

All-Clad Stainless Collection

The All-Clad Stainless collection is high-end cookware that is easy to maintain and offers an exterior of highly polished magnetic stainless steel, making it compatible with new induction stovetops in addition to traditional gas and electric stovetops. The core is made of three separate layers of pure aluminum. The Stainless collection is dishwasher safe (excluding pieces with a non-stick interior).

All-Clad MC2 Collection

The All-Clad MC2 collection features a matte-finish exterior surface of brushed aluminum that adds an industrial look to kitchens. The core is made of pure aluminum. To maintain its appearance, it is best not to put MC2 cookware in the dishwasher.

The champagne-coloured stick-resistant cooking surface was created by NASA and alters the steel at the molecular level. The cooking surface is stick-resistant, metal-utensil safe, and holds up under extreme temperatures so it may be used under a broiler. It is extremely nonporous, so only a small amount of misted oil or cooking spray is needed to prepare the surface for baking. The bakeware will not absorb odours or react with foods, and has a uni-body construction, without folds or crevices, and will not warp. in the spotlight… Single-Serve Coffee Brewers

The latest innovation in the world of hot beverages is the single serve coffee brewer. Regular coffee makers are great when several people are sharing a pot of coffee, but what do you do when only one or two cups are needed (for example, if you live alone or are at home with the kids during the day)? And what if one spouse prefers their coffee bold and another flavoured? How many people are lining up at coffee stands or at drive-through windows to get their morning coffee simply because it's too much bother to brew the coffee at home? And what about a small office, where someone always ends up being responsible for putting on a new pot of coffee?

Single serve coffee brewers offer the solution. As their name implies, the brewers brew one (or two) cups of coffee at a time, on demand, so your cup of coffee is always fresh and you can choose the variety, strength, and flavour of coffee which you prefer. The brewers are fast (you don't need to wait for the water to boil) and easy to use and clean up from. Single serve coffee brewers also allow you to brew both coffee and tea, and some can even make hot chocolate or a cappuccino!

The Keurig Ultra B50 Gourmet Single Cup Home Brewing System ($199) uses innovative K-cups, highly sophisticated mini-brewers. Inside each plastic K-cup is a cone-shaped, pure paper filter with the ideal grind and quantity of your favourite coffee or tea. The K-cup is sealed air-tight to keep light and moisture out, and to lock in freshness and flavour. Pressurized hot water (heated to 185°, the optimal temperature for brewing coffee) flows through the K-cup to brew the perfect cup of coffee or tea. K-cups are being produced by gourmet coffee and tea brands, including Timothy's and Van Houtte in Canada, as well as Green Mountain Coffee Roasters, Gloria Jean's Coffee, Celestial Seasonings, and Bigelow.

To brew, just open the lid, place the K-cup inside the brewer, close the lid, and press the brew button. You can select either a regular cup size (7¼ ounces) or a smaller cup (5¼ ounces) for a more intense taste profile. After brewing, open the lid, remove the spent K-cup, and you're ready to brew the next cup. Since all the brewing takes place inside the K-cup, there is no residue left in the brewer to contaminate your next brew, allowing you to switch between strong coffees and delicate teas without rinsing.

The brewer has both a removable 48-ounce water reservoir and an internal water reservoir. After each cup of coffee or tea is brewed, water is transferred from the external reservoir to the internal one and pre-heated, allowing a fresh cup of coffee or tea to be brewed within seconds. The drip tray catches any spills, or can be removed for filling a travel mug. The LCD display shows the time of day, prompts you during the brewing process, and allows you to program the brewer on and off times.

Golda's Kitchen is pleased to offer a selection of Timothy's World Coffee gourmet coffees and tea for use with the Keurig brewer. A sample pack of 18 coffee and tea K-cups is included with each Keurig brewer. Packs of 25 K-cups ($16.75/pack) are available in 13 varieties of gourmet coffee (including mild, medium, and dark roasts, as well as extra-bold, flavoured, and decaffeinated varieties) and 7 varieties of tea. And each cup of gourmet coffee or tea costs less than the comparable cup at the coffee shop.

The Krups KP1010 Home Café Pod Brewer ($200) has the ability to brew two 2 cups of coffee or tea at the same time. The brewer uses coffee and tea pods, which are similar to tea bags in that the coffee grinds or tea leaves are enclosed inside a flat, permeable filter. The precise control of water, quantity, temperature, and pressure combined with pre-measured beverage pods ensures the perfect drink. The Krups brewer borrows from the company's espresso maker heritage and uses a state-of-the-art thermoblock heating system to pump pressurized hot water through the pods to provide perfect, foolproof results. Folgers, Nabob, and Maxwell House coffee and tea pods are available in supermarkets everywhere. The Krups brewer can also be used with larger creamy pods, which allow you to brew cappuccino, lattes, and hot chocolate.

To brew, slide open the latch at the front of the machine to open the pod holder, place one or two pods inside the brewer, close the lid, and press the brew button. A dial knob lets you select from 6 ounce, 7 ounce, or 9 ounce cup sizes. After brewing, open the lid, remove the pod holders to dispose of the spent pods, and you're ready to brew the next cups. By brewing two pods of the same flavour at once, you can fill a 18-ounce travel mug in one brew cycle.

The brewer has a removable 40-ounce water reservoir (which also has a flip-top lid, so that it can be filled without removing it from the machine) with a charcoal water filter. A removable stainless steel drip tray catches any spills. The brewer has an automatic one hour shut-off.

Cookie Presses

A cookie press lets you easily make homemade spritz cookies in a variety of decorative shapes. The cookie dough is placed inside the barrel of the press, the desired disc is placed on the end, and the dough is squeezed out into the selected shape or pattern. The battery-operated presses can also be used to decorate desserts, make hors d'oeuvres, stuff pastries and pastas, and create beautiful food presentations (such as twice-baked potatoes).

Easy Release Baking

For perfect results every time, most recipes recommend that cake pans be greased and floured. Wilton offers two products which simplify this process: cake release and Bake Easy spray. Squeeze the cake release ($6.50) from the bottle and brush over the bottom and sides of the pan with a pastry brush or paper towel. Bake Easy ($5.00) is a non-stick spray which is sprayed onto the pan (unlike Pam or similar products, Bake Easy contains lecithin to prevents sticking); it's excellent for Bundt-style pans which have intricate designs. Even non-stick pans will benefit from a light spray of Bake Easy.

For easy release of your holiday cookies, breads and rolls, or other foods, line your baking sheets with parchment paper, non-stick baking liner, or a silicone baking mat.

Whipped Cream Dispenser and Dessert Decorator

With a whipped cream dispenser, it's easy to whip up plain or flavoured whipped cream for filling or topping desserts, sundaes, and steaming mugs of hot chocolate. Just pour whipping cream and the desired flavouring into the canister, twist on a charger, shake, and press the handle to dispense perfectly blended cream. Cheesecake Pans

For your holiday cocktail party or dessert tray, make bite-size cheesecakes, tartlets, or hors d'oeuvres using Chicago Metallic's mini cheesecake pan ($37.50). The pan has 12 round cavities, each 2" diameter, with removable bottom discs which lift out to allow you to easily release the contents without disturbing the sides. For larger servings, individual cheesecake pans with removable bottoms are available from 6" to 14" diameter ($12.00 - $33.50).



Holiday Bundt Pans

NordicWare's newest addition to its family of Bundt pans is the wreath, a 10-cup capacity non-stick pan in the shape of a holiday wreath decorated with pine cones and a ribbon ($39.75). Cutting Boards and Bamboo Utensils

Bamboo is a grass that functions as a single plant, self-propagating as it spreads horizontally underground. It continually sends up new shoots, naturally replenishing itself and making it one of the most renewable resources known. Bamboo is not harmed by harvesting and can grow into mature fibre in three to seven years. It is more durable and 16% harder than maple, and a third lighter in weight than oak. Bamboo holds the promise of a sustainable, cost-effective, and ecologically responsible alternative to wood. A beautiful and practical addition to any kitchen, Joyce Chen's bamboo cutting boards are handcrafted from laminated premium bamboo using food-safe materials and techniques. Pizza Stones

Whether making homemade pizza or baking bread, a pizza (baking) stone distributes the oven's heat evenly and absorbs the moisture from the dough, producing a crisper crust. For best results, preheat the stone for 15 - 20 minutes before placing your dough on the stone. Build your pizza on a pizza peel, and then transfer it to the stone. You can leave the stone in the oven when baking cookies or pies, and place the cookie sheet or pie pan right on the stone to improve the heat distribution. Any pizza stone can break if exposed to extreme temperature fluctuations, but thicker stones are more resistant to breakage than thinner ones.

Teapots

A Comfort Food Menu

Funny how we rarely speak of comfort food during the dog days of summer. Perhaps because the warm weather provides its own special level of comfort we don't think in terms of our meals supplying that commodity. Sure enough, as soon as the leaves begin to fall in earnest and the clocks go back one hour, we, too, fall back on our favourite cold-weather foods to shore us up and warm us from the inside out.

Comfort foods take many forms: creamy macaroni and cheese, homemade soups packed with barley and vegetables, hefty bowls of mashed spuds topped with ladles of rich stew, these all work for me. Follow any of these with a warm dessert based on fruit, a little pastry and cream and I am very happy.

The following menu provides much comfort and, I would wager, joy, too, not just in the eating, but in the relatively simple preparation of each recipe.

Root Cellar Chowder

This satisfying vegetable chowder can easily be further embellished with shrimp, mussels, fish or leftover turkey or chicken.

2 Tbsp    butter    30 mL
2 Tbsp   olive oil    30 mL
2   medium onions, chopped
2 cloves   garlic, minced
3 Tbsp   all-purpose flour    45 mL
1/2 cup    dry white wine    125 mL
5 cups    chicken stock    1.2 L
1/2   rutabaga, finely chopped
3   parsnips, peeled, finely chopped
3   medium carrots, finely chopped
2   medium potatoes, peeled, finely chopped
to taste   salt and freshly ground pepper
3 - 4 slices   lean bacon, finely chopped
1 cup    chopped fresh flat leaf parsley    250 mL
1/2 cup    walnuts, finely chopped    125 mL
1 cup    whipping cream    250 mL
  1. In a large sauce pan or Dutch oven, combine the butter with the olive oil over medium-high heat. Sauté the onions and garlic for 5 minutes, until vegetables are softened. Whisk in the flour, reduce heat a little and cook for a further 5 minutes, being careful not to brown the flour.
  2. Whisk the white wine into the flour mixture and increase the heat slightly. Add chicken stock, rutabaga, parsnip, carrots, potatoes, and salt and pepper. Bring to a boil, then reduce heat and allow the mixture to simmer for about 30 minutes.
  3. Sauté bacon over medium-high heat for a few minutes, drain off and discard any fat, then add parsley and walnuts. Continue to saute over medium heat until the bacon is cooked through, about 5 minutes. Remove from heat and keep warm.
  4. Stir the whipping cream into the soup and simmer for a further few minutes until just heated through. Serve garnished with the bacon mixture.

Braised Beef in Dark Ale with Cheddar Toasts

Choose a pot roast of beef for this slow-cooked preparation and ask the butcher to slice it for you beforehand. Serve with a mixture of mashed potato and turnip.

1/4 cup    all-purpose flour    60 mL
2 tsp   dry mustard    10 mL
2 lb   braising beef, sliced    1 kg
2   medium onions, peeled, thinly sliced
4 cloves   garlic, crushed
2   large carrots, peeled, cut into 2-inch (5 cm) sticks
2 cups    dark ale    500 mL
1-1/4 cups    beef broth    310 mL
1 Tbsp    brown sugar    15 mL
1   bay leaf
to taste   salt and freshly ground pepper
 
  1. Preheat oven to 300°F/150C.
  2. Combine the mustard and flour together in a shallow bowl. Dip the slices of meat into this mixture, shaking off the excess and transferring the coated meat to a plate as you work.
  3. Heat a tablespoon of oil in a frying pan set over medium-high heat. Cook the onions and garlic until softened, about 5 minutes. Add the carrots (and a little more oil if needed) and cook for another 5 minutes. Scrape the contents of the pan into a casserole or other ovenproof dish with a lid.
  4. Add remaining oil to the pan, place it over the heat and sear the slices of meat on both sides to brown before laying over the vegetables.
  5. Pour the ale into the pan and bring it to a boil, scraping up any bits clinging to the bottom of the pan as you work. Let it boil for a minute, then add the broth, bay leaf, sugar, and salt and pepper to taste. Pour this mixture over the meat and vegetables and cook in the slow oven for 2.5 - 3 hours until the meat is very tender. Remove the casserole from the oven and let sit for a few minutes while you make the accompanying toasts.
    For the toasts:
12 slices   baguette
1 cup   grated old Cheddar cheese   250 mL
 
  • Preheat oven broiler. Lay the slices of bread on a baking sheet and toast the bread on one side. Remove from the oven, sprinkle with the cheese, and slip back beneath the broiler to toast the cheese. When it is melted and bubbling, remove from the oven. Serve the beef and vegetables in shallow bowls with two cheese toasts placed on top of each serving.

Makes 6 servings

Cranberry Pear Croustade

Croustades are open-faced pies that can hold any number of fillings, sweet or savoury (try a mixture of mushrooms, sliced potatoes, goat cheese and fresh herbs, for instance). This is very good, too, with apples in place of the pears or a combination of both.

1/2 package    frozen puff pastry, thawed (or pastry for a 14-inch/35 cm crust)
1/2 cup   sugar    125 mL
1 tsp   cinnamon    5 mL
1/2 tsp   nutmeg    2.5 mL
5   firm, ripe pears, cored, sliced
3/4 cup   cranberries, fresh or frozen    175 mL
3 Tbsp   all-purpose flour    45 mL
2 Tbsp   butter    30 mL
1   egg yolk, beaten
    sugar for dusting
2 Tbsp   white wine jelly, melted    30 mL
    whipped cream for garnish
  1. Preheat oven to 425°F/220C. Roll out the pastry on a lightly floured surface to a rough 14-inch/35 cm round. Wrap the pastry around a rolling pin and transfer to the centre of a baking sheet.
  2. Combine sugar, cinnamon, nutmeg, pears, cranberries, and flour in a mixing bowl. Toss well and pour into the centre of the pastry. Dot with the butter. Turn the edges of the pastry up and over the filling, overlapping the pastry as necessary and leaving the centre of the filling exposed. (Pastry edges should be a little uneven). Brush off any excess flour, brush with the beaten egg yolk and sprinkle with a bit of sugar.
  3. Bake for 15 minutes, reduce the heat to 375°F/190C and bake for another 25 - 30 minutes or until fruit is tender and the pastry lightly browned. Serve warm with lightly sweetened whipped cream.
